
Banana Pancakes
These healthy pancakes are packed with goodness and will keep you going until your next meal.
Delicious, healthy banana pancakes which can be made vegan and/or gluten free.
Ingredients
120 ml milk
SWAP for plant milk (VG)
1 egg
SWAP for chia egg (VG)
30ml melted coconut oil
1 ripe banana
95g self-raising flour
SWAP for gluten free self-raising flour (GF)
¼ tsp baking powder
½ tsp cinnamon (optional)
1 tsp chia seeds
Method
Add the wet ingredients to a blender followed by the dry ingredients and whizz until smooth.
Oil a pan and warm over a medium heat.
Use a ladle to spoon the mixture onto the pan, turning when bubbles appear on the surface. Cook on both sides.
Serve warm with a sprinkle of pumpkin seeds, sunflower seeds and some additional fruit.
